BAKED STUFFED SQUASH | |
6 lg. yellow squash 1/4 c. chopped onion 1 c. herb seasoned stuffing mix 1/4 c. green pepper (chopped) 2 tbsp. butter Parmesan cheese Boil whole squash in salted water until tender. Cool enough to handle, then split in half. Scoop out inside of squash. Cook pepper and onion in butter until tender; combine with squash you scooped out, mash. Stir in stuffing mix. Fill squash halves with mixture, sprinkle with Parmesan cheese. Place in greased casserole dish and bake at 350 degrees for 30 minutes. |
