COTTAGE CHEESE PIE
 

Pie pastry
2 eggs
1/2 c. cottage cheese
1/2 c. sugar
1/8 tsp. salt
1/2 c. cream
1 tsp. grated lemon rind
Sugar, nutmeg and cinnamon
1 1/2 c. very thinly sliced raw apples

Beat eggs slightly, add cottage cheese, sugar, salt, cream and lemon rind. Line pie plate with pastry dough, put in apples and sprinkle with mixture of sugar, nutmeg, cinnamon. Pour cheese mixture on top. Bake in hot 425 degree oven for 10 minutes, then 350 degrees for 25 minutes.
