ITALIAN SAUSAGE SKILLET DINNER
 

1 lg. onion, chopped
2 cloves garlic, minced
Small amount oil
3/4 lb. Italian sausage
3 med. potatoes, peeled and cut into 1 inch cubes
2 green pepper, seeded and cut into 1 inch squares
2 red peppers, seeded and cut into 1 inch squares
2 c. tomato sauce
1 bay leaf
1/4 tsp. oregano
Salt and pepper to taste

Saute onion and garlic in small amount of oil until golden. Stir in Italian sausage (cut into bite size lengths), potatoes and peppers. Add tomato sauce, bay leaf, oregano, salt and pepper. Simmer, covered, for 45 to 50 minutes or until sausage is tender and potatoes are done.
