ITALIAN OVEN - FRIED FISH
FILLETS
 
1 egg
2 tbsp. oil
6 tbsp. dry bread crumbs
1 tsp. oregano
1 tsp. basil
1/2 tsp. garlic powder
1/2 tsp. paprika
5 tbsp. Parmesan cheese
4 fish fillets (perch, flounder, sole or hake)
Oil
Ground pepper

Beat egg and 2 tablespoons oil together. Combine bread crumbs and the 4 seasonings. Dip dry fillets first into egg mixture, then in cheese and finally in crumb mixture, coating both sides.

Arrange in a single layer in an 8 x 8 x 2 inch, lightly-oiled baking dish. Sprinkle lightly with ground pepper. Bake in a preheated 450 degree oven for 5 minutes. Turn fillets and continue baking another 3-4 minutes. Makes 4 servings.

This is good served with hot, garlicy, buttered noodles and a cold, crisp garden salad.

I doubled this recipe and it tastes great...BUT when I went to turn the fish, all the crumbs stuck to the bottom of the pan...maybe I breaded too heavily, b/c I really packed the breadcrumbs on...either way, I'll try again...this is very easy and tasty!!!

with that in mind, I think I will put parchment paper down first. I love using it for so many things, food doesn't stick, you just throw it away and the pan is washed quickly.
