CATFISH PARMESAN
 

6 pan, dressed whole catfish or 3 1/2 lb. catfish nuggets
2 c. dry wheat bread crumbs
3/4 c. Parmesan cheese
1/4 c. chopped parsley
1 tsp. paprika or cayenne pepper
1/2 tsp. oregano
1/4 tsp. basil
2 tsp. salt
1/2 tsp. pepper, if not using cayenne
3/4 c. butter or cooking oil

Combine bread crumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper. Dip catfish in melted butter or oil and roll in crumb mixture. Arrange fish in a well greased baking dish 14 x 9 x 2 inches. Bake at 375 degrees until fish flakes easily when tasted with a fork. Bake around 25 minutes. Serves 6.
