“BEEF OR TURKEY GRAVY” IS IN:

BEEF OR TURKEY GRAVY 
1/4 cup (1/2 stick) butter
1/4 cup all-purpose flour
2 cups beef broth
1/4 tsp. salt, or to taste
1/4 tsp. pepper, or to taste

Melt butter in a saucepan then add flour. Blend together until no lumps are visible. Add salt and pepper. Cook and stir over medium heat for 5 to 10 minutes or until mixture starts to brown. Turn heat to low and slowly add broth, stirring constantly. Turn heat back up to medium and continue cooking and stirring until gravy boils and thickens. Adjust seasonings to taste.

I doubled the recipe and substituted 1/2 cup of red wine for some of the broth. Oh, and I used chicken instead of beef broth. Instead of flour I used half as much corn starch. Oh, and I added 1 tsp or so of oregano. Basically, Edna, I used the ratios you made and made a gravy/sauce/broth for some left over lamb and potatoes to make a (according to my wife) wonderful stew. Thanks for the base! I wouldn't have had a clue as to where to start without you.

I'll add mushrooms and onions, a cup of water off the potatoes and a beef bullion cube. And of course the red wine will make it sing. I wonder if some garlic will help or hurt?

As others have said, this wouldn't be very much. Started with 3 cups broth, adjusted accordingly the butter and flour. Used salt and pepper, as well as a few dashes of Worcestershire sauce and McCormick's Italian Herb Seasoning (grinder). Cooked per directions, once the gravy began to slowly bubble and thicken, added 1/2 cup sautéd mushrooms and 1 yellow onion, caramelized. Unbelievable flavor. Perfect accompaniment for the roast the broth came from, and french fries.
