JIFFY REUBEN CASSEROLE 
1 (16 oz.) can sauerkraut, drained and cut
1/4 to 1/2 c. chopped onion
1/4 c. chopped parsley
1 tsp. caraway seed
2 c. Swiss cheese, shredded
2/3 c. Thousand Island dressing
1/2 lb. sliced kosher corned beef, chopped
3 slices rye bread, cubed
1/4 c. melted butter

Mix sauerkraut, onion, parsley, and caraway seeds. Place in bottom of 8-inch pan. Top with 1 cup of Swiss cheese and 1/3 cup of dressing. Add all of the corned beef. Top with the rest of the cheese and dressing. Mix the bread cubes with the melted butter and put on top. Bake at 375 degrees for 35 minutes. Serves 4.
