APPLE CAKE WITH BROWN SUGAR ICING
 

1 c. vegetable oil
2 c. sugar
3 eggs, well beaten
1 tbsp. vanilla
2 1/2 c. plain flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. chopped nuts
3 c. chopped apples

Cream oil, sugar and eggs well. Add vanilla. Sift dry ingredients together and add to mixture. Mix well. Fold in apples and nuts. Bake in well greased and floured tube pan or 9 x 13 x 2 inch pan. Bake at 350 degrees for 55 to 60 minutes in tube pan. Bake 45 minutes in 9 x 13 x 2 inch pan. Cover with Brown Sugar Icing.

BROWN SUGAR ICING:

1 c. light brown sugar
1 stick melted butter
1/4 c. evaporated milk
1 tsp. vanilla

Bring first three ingredients to a boil, stirring constantly. Remove from heat and add vanilla. Beat with a spoon until cool. Pour over cake.
