BAKED SPECKLED GRITS 
(If you cannot find Speckled grits, use any regular grits.) 6 c. boiling water 2 tsp. seasoned salt 1 tsp. onion salt 1 tsp. garlic salt 3/4 tsp. Worcestershire sauce 1/2 c. butter (1/2 - 1 lb. Longhorn cheese, cubed) Omit cheese if serving with Shrimp Sauce Paprika

Cook grits in boiling water 5 minutes. Stir in salt, Worcestershire sauce and butter.

Stir 2-3 tbsp. grits into eggs; stir egg mixture into grits. (Add cheese - stir until cheese melts.) Pour into a buttered 2 quart souffle dish; sprinkle heavily with paprika. Cover and refrigerate overnight. Bake at 350 degrees for 1 1/2 hours. Yield: 12 to 15 servings.

NOTE: Grits can be baked ahead of time and frozen. Thaw overnight and warm up in the microwave prior to serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
