1 1/2 lbs. sole
1/2 lb. med. shrimp, peeled & deveined
1/2 lb. scallops
1 clove garlic
2 tbsp. butter
1 carrot, finely chopped
1/2 c. bread crumbs
Parmesan cheese
Butter
1 tbsp. chopped fresh parsley
1/2 tsp. fresh thyme
1. Saute or microwave 2 tablespoons butter, garlic and carrot 2 minutes.
2. Grease glass dish (approximately 8"x12").
3. Line bottom with half of the fillets.
4. Mix bread crumbs, halved shrimp and chopped scallops with sauteed mixture.
5. Spread on top of fillets.
6. Cover with other half of fillets.
