Cole slaw is one of the easiest salads to prepare and is a popular side dish in the Summertime as it is easy to bring along for day trips and picnics and is served at room temperature. Vegetables: 1 large head of cabbage 1/2 cup seeded and chopped green and/or red pepper 2 tablespoons minced roasted pimiento (optional) shredded or julienned carrot strips Wash vegetables. Shred the cabbage and soak in lightly salted ice water for 30 minutes. Drain and dry thoroughly. Add dressing (see below) and toss to coat evenly. Marinate for 1 hour.
