QUICK EASY APPLE STREUSEL COFFEE
CAKE
 
1 1/2 c. flour
2 1/4 tsp. baking powder
1/2 c. sugar
1/2 tsp. salt
1/2 tsp. cinnamon
1 egg
1/2 c. milk
1/4 c. oil
1 1/2 c. chopped apples, raw

STREUSEL TOPPING:

1/4 c. sugar
2 tbsp. flour
1 tbsp. butter
1/2 tsp. cinnamon

Sift flour, measure and resift with baking powder, sugar, salt and cinnamon. Beat egg, milk and oil; pour into dry ingredients; then add apples and mix. Turn into a well greased 8 x 8-inch pan.

Mix together topping to make a crumbly mixture and sprinkle on top batter.

Bake in a preheated 325°F oven for approximately 25 minutes or until tester comes out clean.

Loved it! I added some blueberry flavored craisins to it too. It was very simple and easy to make, turned out great. My 16 year old son told me it was "grade A stuff"!

I changed it to one-half of the sugar to brown (mixing that 1/4 cup in with the wet ingredients) and brown sugar for the topping for a richer flavor. Baked it for the recommended time and it was perfect. I might try all brown sugar next time.

Love this super easy & delicious cake! Make again tonight (happy). Only thing is that it actually needs more then 1/2 cup of milk, just keep adding until you reach the consistency you want.

Hi Phelysha,

Different apples retain more or less moisture than others so sometimes you might need to tweak the moisture (or the flour in case the apples are too moist). Thanks for the tip!

I have made this 5 times. First exactly as directed with longer baking time. Each time after, added various other fruits along with the apples, frozen mixed berries, pineapple. Each time devoured in minutes. I would double as others have but I like being begged to make again and again! Think I'll try apples and pears next. Delicious. Stars to the moon!
