2 c. sifted flour
2 tsp. baking powder
1 tsp. salt
2 tsp. sugar
1 egg
1 c. mashed ripe bananas
1/4 c. melted shortening
1/2 c. blueberries
Sift together first 4 ingredients. Combine egg, banana mixture to dry ingredients, stirring only until flour is dampened. Fold in blueberries. Fill greased muffin tins about 2/3 full. Bake in moderately hot oven (425 degrees) about 20-25 minutes (check at 15 minutes).
Makes 1 dozen large or 2 dozen small muffins.
