JACK CHEESE, SAUSAGE & POTATO
CASSEROLE
 

4 tsp. oil
1 1/2 c. thinly sliced, peeled potatoes
3/4 lb. sweet Italian sausage
1/2 c. chopped green pepper
1/3 c. chopped onion
1/2 can tomato sauce
6 eggs
3/4 tsp. baking powder
1/4 c. Parmesan cheese
4 oz. Monterey Jack cheese
1/2 c. milk
Salt & pepper to taste

Cut sausage into small pieces. Use oil to moisten a shallow casserole dish. Arrange sausage, potatoes, green peppers, onions and Mozzarella cheese in layers. Bake at 375 degrees for 35 to 40 minutes, then remove from oven.

In a medium bowl beat eggs, milk, baking powder and the salt and pepper. Pour this mixture over the sausage and bake an additional 30 minutes. Pour the tomato sauce and sprinkle the Parmesan cheese over the top and bake an additional 10 minutes. Yield: 4 to 6 servings.
