ELDERBERRY BLOSSOM WINE 
1 qt. blossoms, stripped from stems
1 gal. boiling water
1 lemon
1/2 yeast cake
1/2 fresh pineapple if possible
3 lbs. sugar
2 oranges

Strip blossoms from stems, measure into crock. Add the boiling water and let stand 1 hour. Strain and add sugar. Boil just to dissolve sugar, 5 minutes then skim thoroughly. Let cool to lukewarm. Add grated rind and juice of lemon and oranges, grated pineapple and yeast. Let stand for 24 hours. Strain again and cork tight for 6 weeks then bottle.
