1 lb. sweet Italian sausage
1/2 c. chopped onion
1 clove garlic, minced
3 c. uncooked rigatoni
1 c. ricotta cheese
3 1/2 c. spaghetti sauce
2 c. mozzarella cheese
3 tbsp. grated Parmesan
Saute sausage in skillet until well browned on all sides. Remove from pan and slice into thin pieces. Return to pan and add onion, garlic, sauteing until onion is tender. Cook rigatoni according to package directions; drain.
Combine rigatoni, sausage and ricotta; mix well. Layer sauce, rigatoni, mozzarella and Parmesan in baking dish. Bake at 400 degrees for 20-30 minutes.
