TONY ROMA'S ONION RING LOAF | |
1 1/4 lbs. sm. white onions (6 or 7) 2 lg. eggs 2 tbsp. milk 1 1/3 c. flour (approximately) 1 tsp. salt 1 1/2 pts. corn oil for deep frying Slice onions into 1/4 inch rings. Combine eggs and milk in medium bowl. Put flour and salt into large mixing bowl. Heat oil to 385 degrees in deep fryer or heavy 4-quart saucepan. Dip a deep frying basket into hot oil and remove to foil lined cookie sheet for a few minutes. Dip onion rings into egg mixture and then into flour mixture, tossing to coat evenly. Layer the rings in the basket. Continue this process until all rings have been used and layered into deep frying basket. Press them firmly into basket. Lower basket into hot oil, deep frying 12-15 minutes or until all rings are browned and crisp. Lift basket from oil. Drain briefly on paper towels. Loosen edges of loaf with knife and invert onto serving platter. Serves 6. |
