DEREK'S COUNTRY HAM BONE SOUP 
1 baked country ham bone
3 quarts water
1 cup sliced carrots
1 cup sliced celery
1/2 cup chopped onion
1 (10 oz.) pkg. frozen whole kernel corn
1 (10 oz.) pkg. frozen lima beans
1 (16 oz.) can black eyed peas, undrained
1 (16 oz.) can tomatoes, undrained
2 cups cooked elbow macaroni
Salt & pepper, to taste

Place ham bone in large soup kettle. Add water; simmer for at least 30 minutes. Remove bone and remove meat from bone. Chop meat and return to broth (you can also return the ham bone).

Add carrot, celery and onion; simmer 30 minutes. Add remaining vegetables; simmer 1 to 1 1/2 hours. Add macaroni; season with salt and pepper.

Heat to serving temperature.

Just made this recipe. It was great, great, great! I added cubed potatoes and used kidney, pinto, and great northern beans. I purposely left some of the fat on the ham, and this added a lot of flavor.

This one is going on my list to make a few times a year!

Oh, and the macaroni sealed the deal -- it was a great addition.

This is an excellent recipe. I doubled it and substituted 1 can of pinto beans and 1 can of navy beans for the extra lima & black eyed peas, all of them undrained. It's also good with a couple dashes of Frank's Red Hot in your serving bowl.

My mom and grandma made this soup, Always been my favorite. I add a cup or so of rice to it even. We like rice and it's a different way for us to eat it. It cooks in the pot just fine. And leeks we prefer over the potatoes. I pre saute them ofcourse.Thin sliced. My sister adds some parsley and mushrooms fresh sliced and peppers. Gives it extra tang she says.
