MOIST WHITE CAKE 
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening
2 eggs
1 1/2 c. sugar
1 tsp. vanilla extract
1 1/4 c. milk

Preheat oven to 350°F.

Mix shortening, eggs, sugar, vanilla, and milk. Then mix flour, baking powder and salt in another bowl. Then add dry ingredients to other mixture. Pour into a well-greased 9 x 12 pan.

Bake at 350°F for 40 minutes.

This moist white cake easy and delicious. In a convection oven I baked it for about 25 minutes instead of 40 and it turned out nice and golden brown. We also use a buttercream recipe to ice it and put freshly cut strawberries in between layers and on top. This is my second time making it and I would definately make this again; especially for valentine's day, christmas, or other holidays.

Hi Charlene,

It's a good plan to check cakes 5-10 minutes before you expect them to be done because everyone's oven bakes differently. You might also want to check on your oven temperature, leaving an oven thermometer in, or have your oven calibrated. If you know that your oven runs hot, you can reduce the temperature slightly or bake for a shorter time. I am also wondering whether you might have a convection oven, which requires a shorter baking time?

To test if the cake is done, insert a toothpick in the center; if it comes out clean when removed, the cake is done. I sometimes turn off the oven and leave the cake for several minutes even if the toothpick is not really clean, but nearly so (this makes for a moister cake - but it really depends on the recipe).

Loved this recipe! I had no idea a cake from scratch could be so easy and so good. I used butter instead of shortening and I doubled the vanilla - it was delicious! Mine was done at about 35 min and it was perfect... moist, but dense.

I rarely get good results from new cake recipes, even easy ones, but this one turned out perfect and was so easy too. Moist and yummy. I used butter instead as I did not have shortening. Also since my pan was smaller approx. 7x10 it took a little longer approx. 50-55 mins. For the last 15mins I reduced the heat to 340°F as the outside was getting nice and golden while the inside was still not done. I love this recipe and will be using it again for sure!

This is a great recipe to add your own variations to. I used this recipe but lined pineapple rings on a greased glass cake pan, sprinkled pineapple with nutmeg & cinnamon. pouring all my batter on top of the rings, I then placed more pineapple rings on top of batter with another sprinkling of seasonings. I used my 1 1/2 cups pineapple juice instead of milk. At 350°F this cake took 40 minutes. Top with cool whip and garnish with nutmeg. Keep in frig for a refreshing cool, moist treat. Beth
