POTATO & CHEESE CASSEROLE
 

2 lbs. baking potatoes, peeled & diced
1 clove garlic, minced
1/2 c. sliced green onion
2 tbsp. butter
4 oz. cream cheese, softened
1/2 c. half & half
3/4 tsp. salt
1/4 tsp. pepper
8 oz. cold Brie with rind removed, diced
Add parsley for decoration

Cook potatoes in salted boiling water for 15 minutes. Drain well. Saute garlic and green onion in butter, soft (about 2 minutes). Mash potatoes. Beat in garlic butter mixture, cream cheese, half and half, salt and pepper. Mix in Brie. Place in 1 1/2 quart casserole. Bake at 450 degrees for 15 minutes until light brown. Add parsley. Serve.
