MARYLAND FRIED CHICKEN 
1/2 c. all purpose flour
1 tsp. salt
1 tsp. paprika
1/4 tsp. pepper
2 eggs
2 tbsp. water
2 c. cracker crumbs, dry bread crumbs, or 1 c. cornmeal
1/2 tsp. salt
2 1/2 to 3 lbs. broiler/fryer chicken, cut up
Vegetable oil

Mix flour, 1 teaspoon salt, paprika, and pepper in a medium size bowl. Mix eggs and water in a medium size bowl. Mix crumbs and salt in another medium size bowl. Coat chicken with flour mixture. Dip flour coated chicken into egg mixture; coat chicken with crumb mixture.

Heat oil (1/4 inch) in 12 inch skillet over medium high heat until hot. Cook chicken in oil until light brown on all sides, about 10 minutes; reduce heat. Cover tightly and simmer, turning once or twice, until thickest pieces are done, about 35 minutes longer. Remove cover during the last 5 minutes of cooking to crisp chicken. Yield: 6 servings.

This is how my family fries chicken. I still do. For flavor, my second mix (which I keep in a zip lock in the freezer until next time) is bread crumbs, flour AND corn flakes or rice crispies crumbs (put some in a bag and crush them. Adds crispness and a nice flavor.
