GREEN TOMATO CHUTNEY
 

Boil together: 3 c. packed brown sugar 2 c. white sugar

Add gently and cook 10 minutes. 2 tbsp. mustard seed 1 c. raisins 1 sm. garlic clove (4 buds) 1 tbsp. diced ginger root 1 lg. onion (1 1/2 c.) 1/2 c. green pepper 1 tsp. salt 1 tbsp. ground cinnamon 1 tsp. cloves, whole 1 tsp. allspice 1 tsp. nutmeg 1 tsp. anise seed 1/2 lemon with rind, chopped

Add and cook another 10 minutes 6 cups tart apples. Add 3 quarts chunked green tomatoes and cook until thick consistency, about 50 minutes. Seal into jars while hot. Yields about 8 pints.
