1 cup lentils 3 cups broth or water 2 large onions, finely chopped, divided salt to taste 1 tablespoon oil 1 clove garlic, minced 1 teaspoon curry powder
Combine ingredients, simmer 40 minutes

Wow, good, cheap, healthy, quick and easy what more could you ask for! Not a lot of prep time, but I needed to simmer mine for 50 minutes. I will add this to my regular recipes.
