CORNISH HENS OR CHICKEN BREASTS 
4 Cornish game hens, split & thawed or split chicken breasts
2 tbsp. minced parsley
1/4 c. minced onion
1/2 tsp. minced garlic
2 c. orange juice
1/4 c. melted butter

Make marinade of above ingredients.

1/4 c. almonds
1/4 c. raisins

Place hens or breasts in pan, breast side up; pour marinade over meat. let marinate at least 1 hour, longer if possible. Remove from oven pan and pat dry. Put in a 9"x13" pan and brush with butter. Bake, uncovered at 400 degrees for 30 minutes. Pour marinade over meat, sprinkle with raisins and almonds, cover and bake 30 minutes longer, or until tender. Remove from oven and keep meat warm.

Stir 1 tablespoon cornstarch into 2 tablespoons water until smooth, then blend into sauce and cook until thickened. Put meat on serving plate and surround with 3 cups cooked rice. Spoon sauce over meat and rice.
