ITALIAN CHICKEN AND SAUSAGE 
3 tbsp. olive or vegetable oil
1/2 lb. sweet Italian sausage
1 1/4 lbs. boneless chicken
2 c. green peppers
1 c. sliced onion
2 c. sliced mushrooms
1 clove garlic, minced
1 (16 oz.) can tomatoes, crushed
1/4 tsp. oregano
1/8 tsp. pepper
1/8 tsp. salt

In a 10 inch skillet, heat oil over medium heat. Add sausage and cook about 5 minutes. Add chicken and cook about 5 minutes, stirring often or until lightly browned. Remove to a plate. Add remaining tablespoon oil and chunks of green pepper and onion. Cook about 5 minutes. Now add chicken and sausage, tomatoes with juice, and seasonings. Bring to a boil. Reduce heat, cover, and simmer 20 minutes or until sausage is cooked through. Remove cover and cook for 5 to 7 minutes longer until sauce is slightly reduced or thickens.
