4 med. baking potatoes
1/2 c. dairy sour cream
1/2 tsp. salt
1 tbsp. snipped chives or slice green onion tops
Scrub and prick into the potatoes with a fork. Bake in 425 degree oven for 40 to 60 minutes or until done. Cut a lengthwise slice from the top of each potato, discard skin from slice. Reserving potato shells, scoop out the inside and add potato portions from top slices. mash potato. Beat in sour cream, salt and a dash of pepper until fluffy. Pile mashed potato mixture into potato shells. Place in 10 x 6 x 2 inch baking dish. Bake in 425 degree oven for 20 to 25 minutes or until heated through. Garnish each potato with chives or green onion tops. Serves 4.
