BREAKFAST MUFFINS 
1/4 c. honey
1/4 c. brown sugar
1/2 c. vegetable oil
2 eggs
3/4 c. buttermilk
2 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 1/2 c. bran or bran-type cereal
1 c. banana or chopped apples

Mix honey, brown sugar, oil and egg; stir in buttermilk. Stir in remaining ingredients except cereal. Fold in cereal. Distribute evenly in muffin pans. Bake until golden brown, 18-23 minutes.

If adding fruit, fold fruit in with cereal. If batter seems too wet, add more flour or cereal to create desired consistency.
