LIME PUDDING 
1 c. sugar
3 tbsp. all purpose flour
3 tbsp. butter, softened
2 eggs, separated
3 tbsp. lime juice
1 tsp. grated lime rind
1 c. milk

Combine sugar, flour and butter in a mixing bowl. Add unbeaten egg yolks, lime juice, lime and ingredients and milk, blend well. Beat egg whites until stiff; fold into yolk mixture. Pour into greased 1 quart mold. Pour into greased 1 quart mold. Place in pan of hot water and bake at 325 degrees for 1 hour. Serve with whipped cream. This pudding has a cake like top with a smooth, delicious lime sauce beneath.
