|EVERY FEW MINUTES|
1 lb. shrimp, cleaned, or use 1 lb. skinned boned chicken, cut into strips
1/2 c. chopped onion
1 med. green pepper, cut into strips
1 garlic clove, minced
2 tbsp. butter
1 (28 oz.) can whole tomatoes
1 (8 oz.) can tomato sauce
1/2 tsp. oregano leaves
1/2 tsp. dried basil
1 1/2 c. dry minute rice
Saute shrimp with onion, green pepper, and garlic in butter. Add tomatoes, tomato sauce, and seasonings. Bring to a full boil. Stir in dry rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork.
MICROWAVE: Mix shrimp, onion, garlic, and butter in microwave safe dish. Cover and cook at HIGH 5 minutes. Stir in remaining ingredients, cover and cook 5-6 minutes longer (on HIGH). Let stand 5 minutes and fluff with fork.
