CHEESE PENNIES 
4 tbsp. butter, softened
1 c. freshly grated Cheddar cheese
1/4 tsp. salt
Pinch red pepper (cayenne)
3/4 c. flour

Cream butter until light and fluffy. Stir in cheese, salt, red pepper and when mixture is smooth, beat in flour.

Place dough on lightly floured surface and shape into roll it into a cylinder about 1 1/4 inch in diameter. Wrap in wax paper and refrigerate. Preheat oven to 350 degrees.

Slice dough into 1/3 inch thick rounds and place on baking sheet about 1 inch apart. Bake 10 to 12 minutes or until pennies are firm to the touch and a delicate golden color. Transfer to wire rack and cool to room temperature.
