OYSTER CHOWDER 
Oysters
1 med. potato, diced 1/2"
2 shallots, chopped
1 pt. half & half or light cream
Salt
White pepper
2 tbsp. butter

1. Into salted water add medium potato (diced).

2. Melt butter. Cook chopped shallot in butter.

3. Add oyster liqueur, cooked potatoes and cream, salt and pepper. Bring to simmer.

4. Add oysters. Cook 1-2 minutes. Do Not Allow to Boil.
