1/2 c. sliced fresh mushrooms
1/2 c. finely chopped onions
1/4 c. water
2 tbsp. oil (try olive oil for more flavor)
1 lb. tofu, drained
4 tsp. country style chicken seasoning (vegetarian)
1/2 tsp. onion powder
2 tbsp. yeast flakes, not baking yeast
1/2 tsp. garlic powder
1/4 tsp. salt
2 tbsp. fresh chopped chives (put on top after cooking)

Wash, drain and mash tofu with fork or potato masher. In skillet saute onions and mushrooms in oil until soft. Add remaining ingredients and stir together until very slightly browned. You may also add turmeric for yellowish look, just sprinkle until desired color reached to resemble egg colored look. This is very nice for lunch or light supper and surprisingly quick and easy.
