CRAB CASSEROLE 
8 slices white bread
Butter
8 slices American cheese
1 lb. fresh crab meat or imitation crab
1/2 lb. fresh mushrooms, sliced and sauteed in butter
1 onion, chopped
4 eggs, beaten
2 1/2 c. milk
1 tsp. dry mustard
1 tsp. salt

Remove crusts from bread. Butter both sides of bread. Put 4 slices bread in bottom of 8-inch square pan. Top with 4 slices of cheese, then crab, mushrooms, and onion. Top onion layer with remaining cheese and end with bread.

Combine eggs, milk, mustard and salt. Pour over casserole. Cover and soak overnight in refrigerator. Bake uncovered in 350 degree oven for 45-60 minutes. Serves 4.
