2 (8 inch) flour tortillas
Peanut oil for frying
1/2 c. shredded Monterey Jack cheese
1/3 c. shredded Cheddar cheese
1/4 c. chopped green chilies (canned)
1/3 c. chopped onion

Fry the tortillas quickly in hot oil. Prick them with a fork so they will remain flat. When golden on both sides, drain and sprinkle with salt. Place 1 fried tortilla on a cookie sheet. Sprinkle the cheese to cover the entire tortilla, then the chilies ad then the onion.

Place the other tortilla on top and press lightly. Bake at 375 degrees for 10 minutes, or until cheese begins to run. Cut in pie-shaped pieces and serve on a warm platter while crispy and hot.
