CINNAMON AND APPLE CUSTARD PIE 
1 unbaked 9 inch pie shell
4 med. cooking apples, peeled and thinly sliced
1 tbsp. lemon juice
1/2 c. sugar
2 eggs
1 1/4 c. light cream
2 tbsp. butter, melted
1/4 tsp. nutmeg
2 tbsp. sugar
1/2 tsp. cinnamon

Prepare pie crust; chill. Toss sliced apples with lemon juice and sugar in large bowl. Arrange slices in over lapping circles in pie crust. Cover loosely with foil and bake 20 minutes at 400 degrees. Remove foil.

Beat eggs slightly in small bowl. Beat in cream, melted butter and nutmeg. Pour over the apples in the shell and continue baking another 10 minutes. Mix the sugar and cinnamon. Sprinkle over top of pie and bake 10 minutes longer or until pastry is golden and custard is almost set. Cool on wire rack at least 2 hours before cutting.
