|CARROTS IN ORANGE JUICE|
1 bunch carrots (5 or 6)
1/2 cup orange juice
1 3/4 cups cold water
1/2 teaspoon salt
2 tablespoons honey or sugar
3 tablespoons butter
1 tablespoon flour
1/2 cup additional boiling water
Wash, peel and slice the carrots. Place in a saucepan and add the orange juice, salt, honey or sugar and cold water.
Bring to a boil, skim carefully, reduce heat, cover and simmer over very low heat until fork tender, about 1 1/4 hours.
Watch carefully and shake the pan occasionally to prevent sticking.
When tender, add 1/2 cup additional boiling water. Stir in 3 tablespoons butter mixed with 1 tablespoon flour to thicken (cream until smooth before adding).
Cook for several minutes and serve.
