SPAGHETTI SQUASH PIE 
2 c. skim milk
2-4 packets of sweetener
4 tbsp. flour
2 tsp. baking powder
1/4 tsp. salt
4 eggs
1 1/2 tsp. coconut extract
2 tbsp. butter, melted
1 tsp. vanilla
1 c. spaghetti squash, cooked

Place all ingredients in blender except squash. Blend at low speed for 3 minutes. Stir in squash. Pour into 8 or 9 inch pie plate. Let stand for 5 minutes. Bake at 350 degrees for 40 minutes.

1/4 of pie = 1 protein (egg), 1/2 cup milk, 1 1/2 fat and 30 optional calories.

This can be made without the butter for no fat. Makes a great breakfast.
