MOCKINGBIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 pkg. vanilla pudding (not instant)
4 eggs, well beaten
1 c. vegetable oil
1 1/2 tsp. vanilla
1 can crushed pineapple (do not drain)
1 c. chopped pecans
2 c. mashed bananas

Use the can of pineapple with natural juices not the one with heavy syrup.

Mix well: flour, sugar, baking soda, salt, cinnamon and vanilla pudding. Mix well and fold in with above: eggs, oil and vanilla. Add crushed pineapple, pecans and bananas. Pour into 3 greased cake pans. Bake for 25-30 minutes at 350 degrees. Cool 10 minutes and remove.

ICING:

1/2 c. chopped pecans
1 pack cream cheese, soft
1/2 c. butter, soft
1 box powdered sugar
1 tsp. vanilla
