CHEAP & EASY CHICKEN CASSEROLE 
1 Roll of Ritz Crackers
4 tbsp. butter
1 8 oz. tub of sour cream
1 8 oz. can of Cream of Chicken Soup
4 boneless skinless chicken breasts
1 pack shredded Cheddar Cheese

Preheat oven to 350°F.

In a large pot, boil the chicken until cooked all the way through.

While the chicken is boiling, in a medium bowl, combine the 8 ounces of sour cream and the cream of chicken soup. Mix thoroughly. Put the mixture in the bottom of a small casserole dish.

After the chicken is done, cut into bite-size pieces. Then place on top of the sour cream and chicken soup mixture. Add shredded cheddar cheese on top of the chicken (to your liking).

Crush the Ritz crackers and cover the dish. Dot the butter over the top of the dish.

Bake in the oven for 25-30 minutes.

Very easy and tasty indeed. This would be really great with some veggies added, corn or broccoli. My daughter was skeptical at first (as are most 4-year-olds), but loved every bite. Definitely making this one again soon!

I gave this recipe five stars because with just some minor modifications you can make it even more awesome! First, you need a crust. Take two cups of FRENCH'S Cheddar French Fried Onions and spread evenly on the bottom of the dish. Next, I have found that the sour cream and soup is a bit bland. This is easily remedied by also mixing in two cans of Libby%u2019s potted meat food product, which also adds to the texture. Finally, I have found that the cheddar cheese leaves gaps and can get a bit oily. To fix that, and make a truly delightful casserole, just substitute the cheddar with ½ inch slices of Velveeta. You may need to cut some slices in half or shape the corners to cover every delicious bite, but trust me; the extra effort is worth it!

Delicious. We add lots of vegetables to the dish - nothing particular, just a variety of colour and of what is in the fridge. And, of course, a good amount of dijon mustard to the sour cream and soup mixture.

Super simple and tasty recipe!!! My boys and I absolutely loved it!!! I was a little short on time, so instead of boiling chicken breast, I just used a rotisserie chicken I bought at my local super market :-)

This turned out really good!! :) it was perfect for the two of us to have a decent amount and then some left overs. I added spaghetti noodles but you almost have to double the cream of chicken soup and the sour cream mixture if you add noodles (i made the mistake of using thick noodles the first time I made this, you should use thinner noodles) and I also added half a can of peas. It turned out amazing! :) thanks for the recipe!

I absolutely love this recipe. It has become a huge success with friends, and it's a family favorite. I have spruced it up quite a bit thought since I first made it. I now add half of a finely diced onion to the sour cream/soup mixture along with a dash or two of honey (to take just a bit away from the sour cream's tang.) I also add a few spices here and there, don't ask me what, I couldn't tell you it changes to taste every time. lol All I know is that this recipe is truly a hit. It works great if some shredded cheese is mixed in the dish as well, and now just on the top. Also good with broccoli and/or peas added in. Enjoy!

This was really good! I added steamed carrots and brocoli, but next time I might try changing up the soup with cream of mushroom (and add in some fresh mushrooms!!) or cream of brocoli, as I agree the sour cream/soup is a little bland. Maybe a dash of currie?

I keep thinking some cream cheese would go very well too, but I'll have to experiment with that first!!

Yummy. A couple additions: I stirred a drained can of corn into the sour cream/soup mix, added a handful of sliced green onion on top of the grated cheddar, and crushed up whole wheat saltines (instead of Ritz), stirred 2 tbsp melted butter into the saltines and put them on top. Will definitely make again!
