RICE KRISPIE DATE BALLS 
1 stick butter
3/4 c. sugar
1 (8 oz.) chopped dates (with sugar)
1 c. pecans, chopped
1 c. Rice Krispies cereal
1 tsp. vanilla

In saucepan, melt butter and sugar over low heat. Add dates and cook 3 minutes and remove from heat. Add nuts, Rice Krispies and vanilla. When cool enough to handle, form small balls and roll in powdered sugar or coconut.

I make these all the time, but I put them in a pan and cut like bars. Line pan with coconut, then put down hot mixture, then more coconut and press down, cool and cut.

I doubled this recipe and then regretted it. The mixture just would not hold together when I tried to shape it into balls. Tried dumping in the coconut to avoid having them fall apart while trying to roll them. Finally kept my hands wet and really squeezed them tight to shape. Hoping they hold together when bitten. I will look for a different recipe. I am thinking my aunt's recipe had an egg in the cooked mixture?

We make this as a 1.5 to 1.75 inch round log rolled up on a powdered sugar covered piece of parchment. Cool and slice -- or pass the log and a knife on a cutting board for that do-it-yourself sized, interactive dessert.
