We use this recipe every year for Thanksgiving dinner, without the sugar. (The corn and muffin mix are sweet enough for us.) I double it for a group of about 14 folks. There is *never* even a spoonful left at the end of the evening!

I have made this 2 ways one way was the full fat version with the butter and regular sour cream...The next time I made it with fat free sour cream and I can't believe it's not butter spray to make it more figure friendly I loved it both ways. There didn't seem to be much difference in the taste at all... I too left out the sugar in both.

Very, very delicious. Made it with the sugar but next time I will try without. I may have to try to use variations to make it Weight Watcher friendly. Had to make a double batch in a casserole pan and it fed 11 adults no problem.

You add the Jiffy mix in dry. The egg, corn, sour cream, etc will be enough to moisten it. We love this recipe, but it's WAY too sweet! I only use about 2 Tbsp of sugar and that's plenty. Otherwise, it's a great change from the usual boring side dishes that I've grown tired of making.

I've been making this for years and everyone loves it! I also leave out the sugar, but after removing it from the oven I drizzle just a bit of honey on top. Excellent! I also make a version using crisply fried bacon, which I crumble, Mexicorn, and Mexican cornbread mix. I add most of the bacon to the mixture, bake, then instead of using honey I top it with cheddar cheese, pop it back into the oven for about 7 minutes, remove, and sprinkle with the remainder of the bacon. YUM!

My southern Aunt, Sheri, shared this recipe with me. It has a wonderful addition - Vidalia Onions. Follow the recipe, skip the sugar,thinly slice 2 onions into rings, place on top of corn mixture. Bake @ 350°F for 45 - 50 minutes. There will be no leftovers.
