OVEN - BAKED COTTAGE FRIES
 

2 lg. baking potatoes (about 8 oz. each), scrubbed
1 tbsp. butter
1 sm. clove garlic, crushed
1 tbsp. freshly grated Parmesan cheese
1/4 tsp. paprika
Pepper (freshly ground) to taste

Heat oven to 425 degrees. Pour 1/4 cup water into jelly-roll pan. Cut unpeeled potatoes into 1/4 inch slices; arrange in single layer in pan. In small saucepan, over low heat, stir butter with garlic to melt. Brush flavored butter over potatoes; bake 20 minutes. Meanwhile, in small bowl, combine Parmesan, paprika, and pepper. Remove potatoes from oven; heat broiler. Sprinkle cheese mixture over potatoes; broil 2 to 3 minutes until light golden brown. Serve immediately.
