NOPALES (Cooked Cactus) | |
6-8 cactus pods, stickers removed Water Salt to taste 6-8 pork chops, chopped 1 onion, chopped 3 jalapeno peppers, chopped Take razor blade or sharp knife and remove stickers. Cut cactus pods in bite-size pieces. Put in pan and cover with water. Cook until tender (about 45 minutes). Season to taste. Drain off water. Pat cactus dry. Set aside. Chop pork chops into small pieces and fry in large skillet. Add onion and peppers and fry. Add precooked cactus. Mix well and serve hot. Variations: Cooked cactus may be added and prepared with scrambled eggs. |
