ZUCCHINI BREAD OR MUFFINS 
3 c. flour
3/4 c. sugar
1 c. coarsely chopped walnuts
4 1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/2 tsp. apple pie spice
1 tsp. salt
4 eggs
1 tsp. vanilla
3/4 c. Su Bee honey
2/3 c. cooking oil
2 c. grated zucchini

Preheat oven to 325 degrees. Grease two 8 1/2 x 4 1/2 inch loaf pans. In large bowl, mix flour, sugar, walnuts, baking powder, baking soda, pie spice and salt. In medium bowl, beat eggs slightly. Stir in honey, oil, zucchini and vanilla. Stir liquid mixture into flour mixture just until flour is moistened. Spread evenly in loaf pans. Bake 1 hour or until toothpick comes out clean. Cool in pan on wire racks for 10 minutes. Remove from pans. Makes 2 loaves.

MUFFINS:

Mix ingredients as directed. Preheat oven to 375 degrees. Grease muffin tins or use paper liners. Fill muffin cups 3/4 full. Bake for 15 to 20 minutes or until toothpick comes out clean. Yields 29 regular muffins.

I just finished making these muffins are they are really good. Since I only had a 1/4 cup of honey, I added a little over a 1/3 cup of blue agave sweetener (honey like texture). The zucchini I used was frozen, grated zucchini from summer and after I thawed and drained it the stuff worked perfectly. I only had about a 1/4 cup less than what the recipe called for and it still turned out great. My only complaint was the salt amount. If your using kosher salt add a little less than a whole tsp., but that is just my taste. This is a versatile, somewhat easy recipe and a great way to get your kids to eat veggies.
