ZUCCHINI BOATS
 

6 zucchini
1 lb. ground beef
1/2 c. onion, chopped
1 tsp. salt
Pepper to taste
2 tomatoes, chopped
4 slices American cheese, cut in sm. pieces
Progresso bread crumbs
1 sm. green pepper
1/4 tsp. dried basil

Wash and cut zucchini lengthwise and scrape out seeds with teaspoon. Place on cookie sheet with 1/2 inch cold water in bottom. In frying pan, brown ground beef, onion, salt and pepper. Add tomatoes, green pepper, cheese and basil. Add enough bread crumbs to absorb any moisture. Scoop this mixture into zucchini half. Bake in 350 degree oven for 45 minutes. Remove from oven and add more grated cheese on top of boats. Put back in oven for 5 more minutes or until cheese is melted.
