BROILED SALMON STEAK IN BUTTER
SAUCE
 
1 (1 1/2 lb.) salmon steak, about 1 1/2 inches thick
1 tsp. peanut, olive oil
granulated garlic powder and onion powder
Salt & pepper
White butter sauce

Brush the salmon on both sides with oil. Sprinkle very lightly with granulated garlic and onion powder, salt and pepper. Arrange in a baking dish about 6 inches from the heat of broiler. Broil for approximately 10 minutes. Watch carefully and do not walk away while broiling.

No need to turn the steak as it cooks. The fish is done when the center bones comes away easily from flesh. Serve with Butter Sauce.

WHITE BUTTER SAUCE:

6 tbsp. chopped shallots or onions
1 1/2 c. dry white wine
12 tbsp. butter
Salt & pepper

Combine shallots and wine in saucepan and bring to a boil. Let the wine cook down to 1/3 cup and continue cooking over high heat, stirring continuously and add butter, 2 tablespoons at a time. Add salt and pepper to taste.

Serves: 2.
