CHICKEN, BROCCOLI, RICE
CASSEROLE
 
1 (5 oz.) can Swanson boned chicken
1 c. milk
1 (10 oz.) can cream of chicken soup
1/2 c. chopped onions
1/2 c. chopped green peppers
1 med. size bag broccoli
1 1/2 c. Minute Rice
1/2 tsp. salt
1/2 tsp. pepper
American cheese, shredded

Combine all ingredients except cheese and put in casserole. Cover and bake for 25 to 30 minutes. Uncover, sprinkle shredded cheese on top. Bake an additional 5 minutes or until cheese is melted. Bake at 350 degrees.

This one needed major help. After 30 minutes the casserole was not done and it was dry. I added 1/2 cup milk and 2 tbs of butter and baked for another 20 - 30 minutes. It was really tasty!
I used cream of chicken and mushroom soup because I didn't have cream of chicken and I used 10 oz chicken...maybe that is why it was dry, but adding that extra milk and butter helped.
Next time I will try to add my broccoli on the bottom so it cooks more, instead the way I had it.
I will make this again.
