GORTON - (FRENCH) 
1 1/2 lb. lean ground pork
1 med. onion, diced fine
1/2 tsp. cinnamon
1/2 tsp. cloves
Dash of salt and pepper

Put all ingredients into an uncovered deep saucepan and simmer for about 2 hours. Keep mashing down. Pour into a bowl and let sit overnight. Skim off any fat and slice as cold meat for sandwiches. Similar to head cheese.
