TIROPITA 
Greek filo cheese triangles

Bake at 350 degrees until golden and serve warm.

4 eggs
1 lb. Ricotta cheese
1 lb. Feta cheese, crumbled
1 box Filo pastry dough
1/2 lb. butter, melted

Mix eggs, Ricotta, Feta together. Cut filo sheets in half along middle while it is widthwise.

Brush a few dabs of butter onto Filo. Place 1 full tablespoon of mixture on Filo and then fold both sides to center. Brush a little butter onto folded filo and fold into triangle shape. Brush butter on top of triangle. Bake at 350 degrees until golden and serve warm.

Note: can be prepared and frozen, unbaked. Then bake frozen (without prior thawing).
