GROUPER MEDITERRANEAN
 

2 lbs. Grouper fillets
1/4 c. Worcestershire sauce
1/2 c. lemon juice
1/2 c. all-purpose flour
1/2 c. mushrooms, sliced
1/2 c. artichoke hearts, sliced
1/4 c. green olives, sliced
1/4 c. black olives, sliced
1/4 c. minced onion
1 1/2 c. marinara or spaghetti sauce
1/2 tbsp. olive oil
1 tbsp. parsley, chopped
1 c. grated Mozzarella cheese

Combine lemon and Worcestershire sauce and marinate Grouper 5 minutes. Lightly flour fish and saute over medium heat until golden brown, reserve. Saute mushrooms, artichoke hearts, olives and onions in olive oil until hot, but not limp (al-dente), add marinara. Stir until hot. Spoon mixture over fish fillets and sprinkle with grated Mozzarella. Place in oven at 325 degrees until cheese is thoroughly melted. Sprinkle with chopped parsley and serve. Serves 6.
